Feel can be very subjective and some people may feel the difference and some may not. The compressed wool will slightly reduce the amount of compression in the layers below it while the foam quilting can add to the softness of the comfort layers. Some people can “feel” even the smallest differences between two mattresses while for others it takes a much larger difference for them to notice. Wool will also make a difference in ventilation and temperature control.
I certainly agree that an exchange or return policy can be an important part of the value of a mattress. the Amazon Eurotop also has a layer exchange policy but it’s not as liberal as the exchange policy with the BB mattresses that have it.
All of these choices would be very similar in overall “value” (which is typical of the mattresses made by the same manufacturer) but the only way to make “final choices” is to look at all the differences and decide on which of the tradeoffs involved would be most important to you based on your own personal value equation.

2.17 lb polyfoam is a higher quality and more durable material than 1.5 lb polyfoam.
I agree that the ability to exchange a layer and change your comfort level can be particularly valuable in an online purchase where you don’t have the chance to test the mattress first for those who are not completely confident in the suitability of their comfort choice or are less “risk tolerant”.
Wool is a more costly material in a quilting layer than polyfoam and also has real benefits that may be important for some people in terms of humidity and temperature control.
Again … all of these have roughly equivalent “value” but the differences between them may make one a more suitable choice than another for a particular person based on their individual criteria.
