I understand the difference between the two different latex materials but I was wondering when used as a top layer, would I notice a difference in the feel of soft Dunlop vs soft Talalay when I lay on it…?

Both Talalay and Dunlop come in a wide range of different firmness levels so which one will feel firmer to you will depend on the firmness of each layer you are comparing. If they are both the same thickness and the same ILD then the Dunlop would likely feel a little firmer.
