Can I get some suggestions on what is the best value/brand/price for a waterproof mattress protector to purchase? Is Amazon the best place to look for these? Any advice in recommendations is greatly appreciated.

I also wanted to mention we are going to be using this on a power adjustable platform, if that should make a difference?

No … any of the mattress protectors should be fine with an adjustable bed although I would make sure that they have a suitable pocket depth for your mattress because if they are too shallow they may come off when you raise the bed. Some thicker protectors may bunch a bit where the adjustable bed bends when you raise and lower the bed but that won’t harm them or the mattress.
