I don't get it, why is my foam cushion sofa more comfortable than my new Latex mattress? Help!

All mattresses have a break in period that will be more or less noticeable to some people than to others so this would certainly play a role. Based on your comments I would also guess that you are much more sensitive to very small changes than most people would be and I would also guess that you are probably close to the edge of the “comfort/support” range that would be suitable for you so very small changes may take you “over the edge” into the “too soft range” (see post #2 here).

No doubt I am more sensitive to very small changes than most, which is why the 30 day comfort exchange offered by most of the retails in the Denver area doesn’t cut it for me, as the mattress is still breaking in after 30 days. I’ve now visited every dealer in the Denver/Boulder area that carries latex mattresses. The Denver Mattress Company is the only retailer that offers a 4 month money back guarantee in the area, and they do have a latex mattress, but it’s way too soft. One thing I noticed about every latex mattress I checked out, just about no one uses anything over a 2" of soft topper on their mattresses. I would agree that I’m close to the edge of the “comfort/support” range that would be suitable for me, with my current 3 layer combo. Which is why I think the main drawback to my current mattress design is the 3" top layer, which is either too soft and or thick. I wish I had more time with Sleep EZ to try a layer exchange, but I don’t believe they have available a 2" soft layer.
