I’m probably not the best source for airbed information because I am not a fan of airbeds as you can see in this article but post #3 here includes some of the airbed manufacturers that you may be interested in including in your research.
If I was choosing between the two options you are mentioning I would probably lean away from the Ascend and Habitat on the basis that they don’t offer particularly good value in their other mattresses and the “value” of a retailer is often fairly consistent across their entire lineup. A forum search on “Habitat” (you can just click this) will bring up more information about them.
You may also want to talk with Select air beds who are members of the site and may also be worth talking with although the price for the medallion you are mentioning (for a king set) is good.

Most of the key with motion transfer will be in the comfort layers and memory foam is the best of the foam types for motion transfer (it absorbs the most energy of movement) and latex would be second (it is very point elastic which means that it can compress with little effect on the area around it even though it absorbs much less energy than memory foam). Make sure though that if you are using memory foam that you know the density/quality of the foam being used
