This would be a preference choice rather than a “better/worse” choice but there is more about the difference in “feel” between Talalay and Dunlop in post #7 here.
If both mattresses were the same type and blend of latex then this would most likely be the result of differences in the ILD of the layers because you will sink into softer layers more deeply. There is more about the pros and cons of two three inch layers vs a single 6" layer in post #2 here.
