The better options and possibilities I’m aware of in and around the Sacramento area are listed in post #5 here and there are several that sell latex mattresses.
There isn’t a forum list for the Chico or Redding area so I spent a few hours today to see what was available in your more immediate area and the better options that I could see (and the brands I would focus on at each one) are listed in this post. I included all the mattresses I would consider (not just the ones that carry latex) so that others would also have some options in the area but there are a few that carry latex mattresses.

You do have a few latex options available locally that you can test so you should be able to get a better sense of how different types of latex mattresses feel.
