Welcome to the community. You have 3 interesting choices, but I like it. A perfect example of how 3 very different designs may be comfortable and accomplish their intended solution.
Based on your needs as side sleepers and your experience with previous mattresses, and my own experience, here my take on this
The @DLX Premier Hybrid stands out for its excellent pressure relief, especially in the soft and medium firmness options, which is ideal for side sleepers like you and your wife. It offers strong edge support and a responsive feel, though it does have slightly higher motion transfer, which could be noticeable if one of you moves a lot during the night. Its split firmness option is a bonus for couples with different comfort preferences.
The @My_Green_Mattress Natural Escape is a solid choice if you’re looking for durability and eco-friendly materials. It has a medium-firm feel with zoned support coils and organic latex, which provides good support and responsiveness. While it may feel a bit firm initially, especially for lighter sleepers, it tends to soften slightly over time and is known for resisting sagging.
Lastly, the @BrooklynBedding Copperflex Pro Hybrid offers great value, with a lower price point and features like copper-infused foam for cooling and antimicrobial benefits (I am not a big advocate of cooling materials, foams, infusions, but that is just my take on all of that). It performs well in terms of motion isolation and pressure relief, but some have mentioned they find it firmer than expected. It is definitely the budget play here and Brooklyn Bedding does a nice job with their mattresses (I own 3).
Given your shoulder pain and concerns about sagging, the DLX Premier Hybrid or the Natural Escape would likely be the better long-term investments. The DLX comes in a latex version if you like the feel of latex.
If you and your wife have different feel preferences, then the DLX may top the list. Fortunately, you have a lot of choices in this category. Just remember, your foundation will be the key for your mattress to maintain proper support. Please dont skimp in that area. @MattressFoundations has a tank of a foundation, so you may want to take a peek at the Terra and use it as the benchmark.
I cant stress enough that a poorly selected pillow for your mattress combination, is a recipe for shoulder, neck and back pain. I have often stated that 1.5" off in loft can cause you to wake up feeling quite sore.
It is not that just one of these 3 components are important, the all are, so plan this in the budget if you have one as it is super important.
