Can anyone tell me what synthetic foam feels closest to latex?

Is there a reason in particular you’re avoiding latex?
All foams ultimately have unique-to-them properties, but high-resilience (HR) polyurethane foam is probably the closest match as it has a quick response to pressure, similar to latex, offering a “springy” feel that quickly rebounds when you move.
Additionally, some manufacturers create blended foams with latex-like additives to enhance the similarity in feel and performance.
