I’m thinking of putting a 6" high density poly foam at the base followed by with a 2" Dunlop latex and a 2" gel infused foam. My question is shoukd I put the latex under the quilting and above the gel infused foam or below it

This depends on what you’re hoping to feel from your comfort layer. Can you try testing out both configurations before putting it in the encasement to see which you ultimately prefer?
