There have been many forum members that have personal experience on both of them (most have tested a Savvvy Rest and purchased a Sleep EZ) and hopefully some of them will see your post and share their thoughts about how they compare. In the meantime a forum search on Savvy Rest SleepEZ (you can just click the link) will bring up several hundred forum posts that mention both of them (although you will need to scan through them to find the ones that are describing their personal experience rather than asking about or discussing the similarities/differences between both of them). If you were searching the forum you may have had limited results because of how you were spelling Savvy (it has 2 v’s not one).
There are also a few posts that have discussed the differences between the covers but as far as I know the Savvy Rest uses a slightly stiffer twill fabric and the SleepEZ cover has a more stretchy knit fabric on top and a woven backing underneath the wool and would be a little bit softer or more “stretchy”. The Savvy Rest also has a brass zipper and the zipper on the SleepEZ is nylon and the bottom of the cover in the SleepEz is a woven material while the top and bottom of the Savvy Rest are the same (see post#31 here and post #20 here). The Savvy Rest cover also has a top that can be completely removed while SleepEZ also has a zipper on all 4 sides but the top panel can’t be detached from the rest of the cover.
There is also more about the differences in the latex and layering options that each of them have available in post #4 here but their firmness options would be very similar if you choose the same type and blend of latex in both of them yes. SleepEZ also has a better exchange policy and has a refund/return policy as well while Savvy Rest doesn’t.
This would depend on all the parts of your personal value equation that are most important to you. Some people are more comfortable buying locally even with large price differences between very similar mattresses and there may also be some people that prefer Dunlop latex that has an organic certification even though it is basically the same material as 100% natural Dunlop that doesn’t have the organic certification. Many of the posts that show up in the search I linked include my thoughts about the Savvy Rest. They are certainly a good company (although some of their dealers will be more knowledgeable than others) that makes a high quality mattress that uses high quality and durable materials and components and there are no “weak links” in the design but I would make some very careful “value” comparisons based on all the parts of your personal value equation that are most important to you because for many people it may not be in the best “value” range compared to a number of other manufacturers that use the same type and blend of latex in a similar design (combinations of 3" layers) and have a very similar cover but are in much lower budget ranges.
