At this point I’m considering a latex mattress from either Brooklyn Bedding or SleepEZ.
Here’s what I’m wondering: Hypothetically, let’s say I worked with each of them to describe myself and my sleeping style, and followed their suggestions for the specific models/layers I should order.
They’re both “mattress people” with good reputations.
Again in theory, if I were to compare the resulting mattresses side-by-side, how different could they be? Indistinguishable, slightly diff, or extremely diff?
I ask this because I’m hoping that it would come out about the same with either company.

That would be an interesting experiment 
I’ll assume first of all that you are comparing the Total Latex mattress from BB not one of the hybrids.
In design of course they are different so while some people may “feel” certain combinations as being functionally the same … in most cases there would be at least some differences I would think. SleepEz has two bottom layers and BB has only one so that would make some difference no matter what top layer you chose and assuming that you ordered the same ILD for the top 3" in both cases their covers are also different with SleepEz using only wool and BB using wool and a thin layer of polyfoam in the quilting.
I haven’t slept on either of their “standard” or “default” mattresses so I don’t know this from personal experience but I would guess that they would be similar but not identical (certainly not extremely different) in the perceptions of most people.
