Hybrid Firm Mattress Shopping - More Questions than Answers

Wow, Where to start. Luckily I found this place through Reddit before blindly trusting Costco but the more I read the more questions I have.

The Basics: Looking for a King mattress for sub $2k or around there for myself and my wife.
Me: 5’8" 190lbs ~29BMI. Muscular build with large drop from chest/shoulders to waist. Mostly stomach sleeper until recent shoulder pain has had me more combination. More on that later.
Wife: 5’'5" 150lbs ~25 BMI. Muscular build as well. Mostly Side sleeper but moves around a bit. She sleeps hot and regularly wakes up sweating.

Background: Moved into a house a few years back but kept the old Queen bed frame. Got a temporary Zinus hybrid mattress to hold us over until we upgraded to king (That looks dumb now). Appears that the foam layer has really broken down and my pressure points are all getting destroyed by the inner spring. Didn’t realize what was happening until I started researching a King mattress upgrade and learned about recommended layer sizing, material breakdown, etc… but it all makes sense now.

My week+ of research so far has me narrowed down to a Medium firmness Latex/Innerspring Hybrid with at least 3" of comfort layering. Though I have been giving more thought to a full Latex option thanks to the forums. Interestingly enough after I had all three selected I found a recent forum post from a mod suggesting these three.

Obviously everyone is different so you cant really recommend one over the other for me but now that I’m to this stage I wanted to make sure I was on the right track for my wife and I’s body type and sleep positions. It’s very hard to know if I should be adding on additional layers or which latex I should get. Beyond the comfort of the bed itself I’m also taking into account the durability, delivery times, haul away and return process. Now that we have somewhat of an Idea we plan to visit a showroom and do a little testing (once our street gets plowed)

Please let me know if you have any insight that might sway me towards one brand over the other, or what questions I should be calling in and asking. I’d also be open to suggestions on potentially more applicable beds that I may have missed.
