Ideas on mattress for weird sleeper?

But my question is - I recall coming across one diy site that let you pick the layers and zones for each side of a mattress so you put it together like blocks and put a wool case around it, however I absolutely can not remember what it was. Any ideas on what site I might be thinking of (or others that are similar)

It sounds like you are referring to one of the manufacturers that makes component latex mattress “kits”. If that’s the case then it’s most likely one of the manufacturers in post #3 here which includes a list of many of the online manufacturers that sell component latex mattresses.
