Post #4 here has some good sources for mattress or topper covers.
A good quality cover is important for latex because it can degrade much more quickly with exposure to air, ozone, or ultraviolet light.

We just purchased a 3" talalay topper from SleepEZ with an organic quilted cotton/wool zippered cover. The option for the cotton/wool cover is not currently on their website–I had to call and ask–but it is available. The cost for a queen topper and cover was $649 before the Mattress Underground 5% discount. I’m not sure how much the cover alone would cost but the topper alone is $500 so I assume around $149 for the cover.
