Your site is crazy awesome! I have learned so much—now would love another opinion–looking at the 7 and 9 inch latex mattresses on Rocky Mountain site–my dh and I are usually firm mattress people–would the extra 2’ on the 9" mattress make it too soft? I like the idea of the extra 2" for extended life of the mattress, but fear it would be too soft>

The softness or firmness of a mattress will depend on many factors and on the perceptions of the person sleeping on it (firmer foams will generally feel softer for heavier people than for lighter people).
It would also depend on the ILD of the latex layers in combination with the thickness of the layers. In other words you could use a firm 2" layer over a firm 6" core and for most people it would be firmer than a softer 6" core. Softness and thickness work together.
Your best information about any specific mattress will always come from the manufacturer who will have more knowledge about their own mattresses and how they may feel for different people than anyone else. The basic answer to your question though is that in certain combinations a 6" + 2" latex mattress could be either soft or firm depending on the ILD of the latex in both layers.
