Hi there, I’m really trying my best to digest all the wonderful information on this site. The technical specificity is very thorough, but it’s difficult for a layperson like me to absorb all the industry lingo and make a decision.
After reading through the mattress selection process guide I think I have arrived at a vague understanding of what I should try: a queen-sized latex comfort layer mattress with a latex/innerspring support layer.
I am 6’4 and 220 lbs, I sleep on my back and side and regularly have lower back and upper back pain on my current mattress. My girlfriend is 5’8, 160 lbs, sleeps on her back and side and has no pain issues. Both of us prefer a firmer feel to our mattress.
I managed to narrow down my search to these two options, and I was wondering if anyone had any thoughts on these:

The type of mattress is more of a preference than a need but it’s good to see that you settled on hybrid latex or an all latex mattress as there is little that can go wrong with that in terms of durability.

As far as the two mattresses you narrowed your search to, there is a little more leg work that needs to be done. I do not see anywhere on their sites the breakdown of all the layers and components in each of these mattresses.
Even though they state that the Crown is advertised as having a “thick Talalay latex topper” and foam encased pocket coil unit they do not list the thickness of the Talalay inside the mattress and also the density of perimeter edge foam.
The Crown series is 14-inch in height. Typically, a pocket coil is 6 – 8 inches thick (rarely 10") which leaves 6 inches unaccounted for. I seriously doubt that the Talalay is 6" height in a $700 queen mattress so I suspect that there are other less quality foams in this construction. I also don’t understand what a 5-layer pocket coil foundation is. The same goes for the Dreamstar.
I’d keep in mind that outside of whether a mattress is a good match for you in terms of PPP … a mattress is only as good as the quality of the materials inside it so regardless of the name of the manufacturer … I would need to know the specifics of what was inside any mattress you were considering to make any meaningful comments about the quality of the materials (see this article ).
The safest route to go is to call the shops and determine how knowledgeable they are and find all these mattress specs from the retailer.
Generally, if we are considering a mattress from an outlet that knows less than we do or isn’t able (nor willing) to provide the most basic quality specs about their mattresses … or that sells mattresses based on marketing tactics (such as stories or fake sales) … then the odds are high that we’ll end up with a lower-quality and higher-priced mattress … unless we take the time to find the information needed to make meaningful quality/value purchase decisions. As the first step on your lookout for a new mattress, I’d look for a transparent company that provides facts and meaningful information on their site and I’d dismiss vendors that do otherwise. There are many outlets out there that do things the right way and typically they are those that are a pleasure to deal with.
