Looking for soft latex mattress

We are in Ontario, Canada. Have tried Simba, the Balancer from CBHWood, Foamite in Vaughn, and various other mattresses around town.
Trying to find a soft feeling mattress that relieves pressure on the hips for a female, 250 pounds and I’m 150.
I’d like a latex mattress for longevity, but don’t know what to do next. Dormio is a likely next stop but pretty pricey.
The Simba 5000 seemed great for my partner, just ok for me. Sealy Optimum Marvel and Chill Trio Vivid seem to be good for both of us, but Sealy seems not to be too specific on materials.
Any other ideas? We want to try it in person. Is there anyone who knows of a soft latex mattress like the Simba?

Sorry for the delayed reply - the holiday season can get a little crazy.

Testing in person is definitely going to be your best data point in terms of figuring out what feels most comfortable for your specific needs. As you pointed out, Sealy doesn’t share their specifications. Usually under the guise of keeping their configurations out of the eye of their competitors - the reality is that they know an educated consumer can identify weak links and truth be told, they’re not going to cry when the foam in your mattress fails.5 years down the line because then they reap the benefit of another mattress sale!

Also, it’s really hard to approximate mattress. The Simba5000 is a viscose memory foam mattress. But, everything from the cover to the coils affect the feel of a mattress. So, even if you found the same foam in the same density on another mattress, it’s not going to feel the same because the other components are not identical.

Dormio does split configurations so each sleeper can choose the firmness that best suits them. I hope you’re able to visit their store and have a chat - they’re really knowledgable folks!
