I tried a really lovely protector from Peace Lily (an Australian company, but I’m in the US). Soft, stretchy cotton knit, a thin layer of wool. I washed it according to their directions before putting on my bed, and it was a disaster. They ended up telling me they’ve changed their recommendations for cleaning and no longer suggest putting it in the dryer. Oops. Would’ve been helpful to know before I followed their recommendation! If you don’t mind air drying it for up to 24 hours whenever you wash it, it really was wonderful and I’d recommend it. I would have slept directly on it without a sheet!
After they gave me a refund for the seriously shrunken protectors, I wound up choosing a non-waterproof protector from Whisper Organics. 100% cotton with something like 1/4" cotton padding inside. Soft. No plasticky stuff. Works nicely on our adjustable beds. We’ve had it only a week or so, so I can’t speak to its longevity, but so far, so good.
You may want to check with @TheCleanBedroom. They have a variety of toppers that are breathable, natural, with and without being water proof/resistant.
For dust mites, wash your sheets and pillowcases with a cap full of eucalyptus oil in the wash water. As long as you dont have pets that may react to the eucalyptus. If you have pets, then use a cup of vinegar in the bedding wash, that will also break down allergens and discourage dustmites. Eucalyptus or Peppermint essential oils in the wash are better.
