I would greatly appreciate some recommendations. For the past 7 years, we’ve been comfortably sleeping on two twin XL Ultimate Hybrid mattresses (8" pocketed coils + 3" latex) from Arizona Mattress. On top of this, we have 3” Talalay toppers (1 ILD 14; 1 ILD 19). The total height is 15" and all of this sits on Leggett & Platt adjustable bases. Although the beds are still super comfortable, we have three chief complaints leading us to decide to buy a new King-size mattress:

My husband has never liked the “crack” in the middle. He moves around too much, and it wakes him up when an extremity ends up in it.

I want a maximum of 12" height. At 15", even deep pocketed sheets tend to slip off and my quilt barely covers the sides. I’ve also read that mattresses exceeding 13" on an adjustable base tend to resist bending.

The toppers tend to slide off the mattress at the foot of the bed with repeated raising/lowering of the head and foot. Even the mattress itself tends to bulge out at the base (even though we have retainer bars in place to minimize sliding).
Some info about me because I’m the “picky” sleeper. I’m 5’2” and weigh about 115 lbs. I’m 60 and have hip and back pain that causes me to toss and turn on most other mattresses. I sleep like a rock, usually on my side, on what we have. I tend to like a soft feel and the 19 ILD topper is on my side—very soft, but not ultra soft, which is on my husband’s side. He’s okay with either level of comfort and I probably would be too.
I suspect what I might like is a true one-piece latex hybrid mattress, where everything is stitched together and layers cannot be removed/replaced or flipped. My assumption is this would be less likely to bulge out at the bottom and layers wouldn’t slide off at the foot of the bed. However, I’ve read that some people like having the ability to swap out layers (which we’ve never done), and I wonder if I might regret not having that flexibility.
Budget is flexible, but I don’t want to pay for big brand marketing unless it’s warranted.
