What is the ILD of the SleepEz “soft” 3" talalay natural layer? I have heard it’s in the low 20’s. Is that soft enough for someone who is a side sleeper?

SleepEz lists it as 22-24 ILD which “on average” would work well for most side sleepers within an average weight range.
ILD’s are not exact though and may also vary slightly depending on the specific material (Dunlop or Talalay and which supplier they are using) so it would be best to call and ask them about more specific details or specs of the various options they offer.
