If a consumer wanted to verify a product for authenticity how would he or she going about doing this for Latex?

Without testing a sample of the product at a lab … you would be primarily dependent on your trust of the manufacturer or retailer you purchased from, their knowledge of and research into what they sell, and the information they are willing and able to provide you.
There are also several testing organizations that certify latex in various ways and testing certifications such as QUL and eco-institut may include testing for the natural latex content of a mattress. There is a list of some of the certifications you may encounter in this article (although most of them are about safety rather than natural latex content).
