My main concern is that there could be a gap in the middle of the mattress if the layers shift. Some have reported this issue, but it does not seem like it would be a big deal with one person sleeping on either side of the gap, if a gap even forms in the first place.

There is more about split layers in post #2 here and as you can see with a suitable tight fitting quilted cover there won’t be any issues with any “gap” in the center of your mattress. There are also some comments here about the very few reviews (out of tens of thousands that have been sold by many manufacturers) that mention having any issues with layers shifting with a split layering.
