We have a 1 year old Spindle latex mattress Med-Med-Firm which we love but I miss the feel of the soft pillowtop I had on my old coil mattress. Spindle doesn’t sell toppers but recommends 3" in their FAQ. Other topper sellers say 2" is the most popular thickness. I’m sure a lot of that depends on whether you are buying a topper to soften up a new mattress or beef up a sagging older one.
What would you suggest? I’m a side/stomach sleeper at 175 lbs. and my wife is a side sleeper at 125 lbs.

Sorry to hear you’re missing that plush feel from your old mattress. The thickness you need depends on preference and also the thickness of your existing comfort layer. If you already have a 2" comfort layer, 2" is going to likely be enough for you as a side sleeper to provide additional cushioning without completely affecting your sleep alignment.
Have you considered swapping out the top layer completely for a soft latex layer?

BMI is important here (relates to pressure) so we need you and your wife’s heights to be able to comment much. That said if you really prefer that pillowtop feel then the thicker option will probably be better. You can also double up on the 2" layers to get 4" total (this is what I use on my own mattress) but then use different firmnesses (ILDs) to adjust for you and your wife’s personal preferences (ex your wife might like 22/22 while you might prefer 22/28 for more support). Again just something to think about.

I have not considered swapping out the layers because Spindle doesn’t make a soft layer. The other reason I should have mentioned is my wife is a side sleeper and she could use the extra support as her hips and shoulders don’t quite sink far enough into the mattress.
There’s also the question of the cover. A lot of toppers only come with a cotton cover and that seems counterproductive, putting it on the original cotton/wool mattress cover and covering up it’s cooling qualities. I also have concerns about the 3" being too soft. There also is the option of buying a thick mattress wool cover.
All things considered, the 2" is probably my safest bet because it should bring more of the original bed into the equation. It’s unfortunate there’s no where around me to try these configurations out so it’s all down to guesswork.

I’ve long thought that there would be a market for a DIY “build a bed” type store that lets you mix and match materials on-site under the watchful eye of a DIY expert.
In this case, perhaps finding a company with a great return or exchange policy on toppers may be your best bet so that you can easily swap out if the one you buy isn’t working for you the way you’d hoped.
