I have been snooping around this site and forums for the last few weeks.
I believe my wife and I have narrowed our search down to the Ultimate Dreams Mattresses.
We have been leaning towards this mattress:

However today whenever I was reading this site I noticed they have a Eurotop with a zipper:

Is the main difference between these two the ability to change out the latex comfort layer?

Yes … this is the main difference although the Eurotop also has a thicker base (8" vs 5.5") so the final mattress is 12" vs 10". It is also more expensive but the “risk” of a “mistake” is also lower because the latex layer can be exchanged for a softer or firmer version for a small cost if necessary.
