Latex mattress layering

This past year we bought a latex mattress. We already had a soft dunlop layer we purchased a few years ago so we just ordered two other layers from SleepEZ. Based on their recommendation the layering we did is:
Soft Dunlop
Medium Dunlop
Firm Dunlop
My wife (5’ 175lbs) and I (5’11" 200lbs) both found it way to firm. I spoke with SleepEZ and they recommended trying a Soft Talalay layer for the top. For me I started having really bad knee pain. I have never had knee problems so this was weird for me. They had told me it can take some time to adjust to the bed so I slept on it for around a month but the knee pain got so bad I was starting to feel I was crippled. I ended up sleeping on our regular spring guest mattress and the knee pain went away very quickly. I contacted them again and we ended up exchanging the firm dunlop for a medium talalay. So then we tried:
Soft Talalay
Medium Talalay
Medium Dunlop

This left me with backaches and not sleeping well. It didn’t seem supportive enough. Since we had the soft layer of Dunlop I switched the layering to
Medium Talalay
Medium Dunlop
Soft Dunlop

This works decently for me. It’s not perfect but I sleep through the night and mostly have minor aches. I do get mild knee pain still with this setup tho and now my wife is complaining she is having some pains in her middle area just above her hips. I have read on a canopy effect that can occur when you have a softer layer under a firmer layer so I’ve wondered if we should try:
Medium Talalay
Medium Dunlop
Medium Dunlop

I’m not sure at this point though and after trying different layers and not really coming to a good setup I’m not sure I want to spend more money at this point. SleepEZ was great to work with so I don’t mean this any of this as a criticism to them. I’m wondering if I’m missing something or even if a latex mattress isn’t right for us. I really like the naturalness of it and want to make it work. We had a sleep number before this that we slept on for years without any major issues. I started to get really bad hip pain to the point my hip felt like it was getting pushed out of place. The latex completely solved this issue but now I get the knee pains and I’m not sure what to do at this point. Any insight would be greatly appreciated. Also for reference we are using a stretch cotton cover as we didn’t like the wool. -thanks

Honestly they made the right recommendations based on your feedback. Maybe a spring support with latex on top would work better for you (Hybrid). I’ve not heard of knee pain attributed to a mattress before. You sure you don’t have sciatica?

Thanks for the response. SleepEZ said they had never heard of someone having the knee pain issue either so it’s been hard to really find anything on it. The pain doesn’t seem to be nerve related and typically goes away if I sleep on our standard spring guest mattress so I’m pretty sure it’s not sciatica or anything like that. I generally don’t find that mattress comfortable tho so don’t want to use it full time. This does make me wonder if doing a hybrid would solve that issue. I have looked at your site before and see you have the two spring options (6" and 8"). Since we have the 9 inch cover I had considered getting the 6 inch version since it would fit with a 3 inch topper which would also allow us to try a lot of options given the latex layers we already own now. If we try this option which spring would you suggest? Thanks
