Recommendation for all latex build

Hi, wondering if you could recommend a DIY build based on these stats.

My wife and I are both 150-160 lb, (me: 6’, her: 5’7"), both side/back sleepers. But while my wife prefers back sleeping, I am trying to become a side sleeper exclusively to deal with my sleep apnea, so I would expect to need a softer side. We plan to do a split queen mattress.

Are the 6" talalay cores a good place to start? I’m having difficulty deciding between the 28, 32 and 36 ILDs, and wondering if we should do split cores all the way down with different firmnesses, or just split the comfort layer(s).

We could also do a hybrid latex/coil build, but I’m concerned it would be too firm for me no matter how thick the comfort layers were.

Thank you for reaching out to us. Dual firmness options have always been available on all our models. Based on your info I would go with #32 cores and request a dual firmness 3" 1/2 #19 and 1/2 #28 for the top comfort layer. This is every day stuff here. You just use the Comment Section when checking out to tell us you need the dual firmness as described above.
