I have been doing some research (not very well) into what kind of mattress is best for someone who is 360+ pounds while also being affordable (my max budget is $189) because the current mattress that I have (a cheap spring mattress) has become almost unusable. Even with a thick mattress topper, the damaged springs dig into my back and sides. I am a side sleeper, so my side is often sore in the mornings. What is the best budget mattress I can get?

Your budget is a hundred and eighty nine dollars?
Around that much, I live on a fixed income and thats the most I can afford.
I would recommend going for a higher budget, but using a payment plan so you only have to pay like $30-50 a month.
But if you want to not have a payment plan, this is the best deal i could find.

If you place your existing thick mattress topper over a fully inflated, heavy-duty air bed, it will provide a completely flat, unyielding support plane that won’t have broken steel springs poking into your body. I’m going to jump in here out of desperation. You didn’t mention what size mattress you need, and that makes a big difference at this budget.
Considering what NikkiTMU said about coil thickness and gauge, this twin sized mattress could work. How long it will work is another question. It’s a relatively thin mattress with a hard feel, and since you’re a higher-weight side sleeper, I’d consider it more of a “desperation mattress” than an ideal long-term solution.
That said, if your current mattress has broken springs digging into you, this would likely be a significant improvement. You may also be able to reuse your existing topper to add some cushioning and pressure relief for side sleeping.
Even if you find something on Amazon within your budget, I doubt it will be as well built as an OMF mattress in this price range. Another option that falls into the same category is this 13G mattress with 6g Border Rod. Again, it’s not specifically designed for bigger folks, but if there’s a chance of finding something affordable that can hold up under your weight, this type of construction gives you a better shot than most budget foam mattresses.
The last option is query a local mattress store and tell them what you need for your budget.
