Sheesh, how do all these people stay in business? Do we really need that many mattress stores for a city of 75,000 people? Anyway, just seeking input on which might be good stores/knowledgeable staff/good prices.

Just in case you haven’t read it yet … the first place I would start your research is the mattress shopping tutorial here which has all the basic information, steps, and guidelines that you will need to know how to make the best possible choices … and know how and why to avoid the worst ones. One of the links there is this article about the types of manufacturers or retailers that I would look for.
St George, UT is one of the few areas in the country where there isn’t a list of some of the better options or possibilities I’m aware of (the closest list is for Henderson/Las Vegas here) so time permitting over the course of the next few days I’ll take a look in the area to see If I can help you (and others that may come here that are in the same area) identify some of the better “possibilities” that are close to you.

I did some preliminary research into the St George, UT area that included all the stores you listed and the others that showed up on a google search (and based on what I could see on their sites these are the stores that I would include as “possibilities” that I would consider on a mattress by mattress basis. I haven’t talked with any of them but I’ve included the manufacturers that they carry where your chances of being able to find out the type and quality of the materials inside the mattress is higher but you would need to confirm that they will provide you with the information you need to make an informed choice (see this article).
Denver Mattress® - The Easiest Way to Get the Right Mattress St George, UT. They are a regional manufacturer that makes a wide range of mattresses including innersprings and their iChoice models which include a “mostly latex” and a latex/memory foam hybrid. They are transparent about the materials they use in their mattresses and are good quality/value compared to most mainstream choices. I would avoid the major brands they also carry.
